What it is

Finely chopped onion
Green chilli + garlic
Ajwain / jeera
Mustard oil (non-negotiable for that authentic punch)
Salt, coriander, lemon or aamchur
How it’s made
Knead soft wheat dough
Mix dry-ish stuffing (not wet, or it’ll burst)
Stuff, roll gently
Cook on tawa with ghee or oil till crispy brown spots
How to eat it
With hari chutney or chokha
Some folks go full savage and eat it with just green chilli + butter
Works great for breakfast or dinner
Pro tip
Add a tiny splash of water or lemon juice to the stuffing so it binds—but keep it crumbly.
