What it is

  • A stuffed paratha filled with sattu (roasted chana flour)

  • Popular in Bihar, Jharkhand, eastern UP

  • Protein-rich, filling, and very desi-powerfood

Classic stuffing

  • Sattu

  • Finely chopped onion

  • Green chilli + garlic

  • Ajwain / jeera

  • Mustard oil (non-negotiable for that authentic punch)

  • Salt, coriander, lemon or aamchur

How it’s made

  1. Knead soft wheat dough

  2. Mix dry-ish stuffing (not wet, or it’ll burst)

  3. Stuff, roll gently

  4. Cook on tawa with ghee or oil till crispy brown spots

How to eat it

  • With hari chutney or chokha

  • Some folks go full savage and eat it with just green chilli + butter 😄

  • Works great for breakfast or dinner

Pro tip
Add a tiny splash of water or lemon juice to the stuffing so it binds—but keep it crumbly.
